Insulated carriers remain useful before service. They help protect food during transport but do not replace active hot holding at the buffet. Moving covered pans directly from the carrier into a preheated chafer reduces unnecessary heat loss.
A visible flame only confirms that fuel is burning. It does not prove that every part of the food has reached a suitable holding temperature. Catering staff should measure several areas of the pan with a clean, calibrated thermometer and record results according to the venue’s food-safety procedure.
