How to Use Chafing Fuel?

Chafing fuel supplies portable heat beneath a water pan, allowing food warmers to operate at hotel buffets, catered events, wedding venues, and temporary serving stations. Because the fuel produces an open flame, correct placement, lighting, monitoring, and extinguishing procedures are necessary. Staff should review the fuel-container instructions and applicable venue rules before every service.

Select Compatible Fuel

Fuel cans vary in burn duration, heat output, container size, and formulation. The selected can must fit completely inside the chafer’s fuel holder. A can that is too wide, too tall, or unstable should not be placed loosely beneath the water pan.

Estimate fuel needs using the planned service duration and the stated burn time on the container. Extra cans should remain sealed and stored away from heat until required. Never refill, puncture, or modify a disposable fuel container.

Prepare Before Lighting

Complete most of the chafer assembly before opening the fuel. Position the frame on a flat, heat-resistant surface, install the water pan, and add hot water. Keep combustible decorations, paper products, loose clothing, and electrical cables away from the burner area.

Food should already be cooked and hot. The chafer and its fuel are intended for holding temperature, not bringing refrigerated food rapidly to a safe serving temperature.

Light the Fuel Correctly

Place the opened fuel can inside its holder before ignition. Use a long-reach lighter while keeping hands, sleeves, and hair away from the flame. Do not carry a burning can across the buffet area.

After lighting, center the holder beneath the water pan. When two holders are supplied with a rectangular chafer, position them at the intended heating points to improve heat distribution. Do not add more burners than the equipment was built to accommodate.

Staff should never leave active fuel unattended. Guest access to the lower part of the chafer should also be restricted, particularly where children may be present.

Control Heat During Service

Monitor the food using a clean, calibrated thermometer instead of judging heat by flame height. Applicable hot-held foods generally need to remain at 57°C or 135°F or above under FDA guidance. Check local food-service rules for the operating destination.

The water level must not be allowed to run dry. Use hot water for replenishment and work carefully around steam. If excessive heat is affecting food quality, adjust the holder according to its structure rather than moving a burning container by hand.

Extinguish and Store

Use the holder’s cover or snuffer plate to extinguish the flame. Blowing on the fuel can spread flame or hot material. Confirm that the flame is completely out, then allow the can and surrounding metal components to cool.
